Easy Chicken and Yellow Rice Recipe

This is a ridiculously easy chicken and yellow rice recipe! Use your leftover chicken and whip up this hearty dinner of chicken and Vigo yellow rice one-pot meal for quicker cleanup. It’s food your family will love.

If you have shredded chicken leftover from that whole chicken you cooked, you may be like me and wondering what you do with it.  My family usually eats a decent amount of chicken, but I’ve found I usually pick out about 2 cups or so that I can’t stand to waste.  Now, there’s only so much chicken salad I can stomach.  And, I don’t want to do it often.  Thankfully, my brother-in-law shared a version of this recipe with me … leaving out some details (like actual amounts of liquid).

After a few tries, I finally perfected this recipe and added my own spin.   And, because I don’t like reading stories that have nothing to do with a recipe, I won’t bore you either.

All you need to know is this recipe has become a favorite in our household.

The husband, who rarely expresses his feelings about food actually told me he really likes this dinner.  My kids like everything, so there you go.  Hubby and daughter like to throw some hot sauce in the mix, too.  I love it because it’s EASY (I don’t have time for complicated recipes) and helps me use the leftover chicken (not a fan of waste)!

Chicken and Vigo Yellow Rice Dinner Recipe

Be sure to defrost your frozen homemade chicken broth for this easy chicken and yellow rice dinner!  This is an excellent way to use up the leftover shredded chicken from a whole roasted chicken that’s often a Sunday meal.  When you’re finished with this, don’t forget to try out some other Vigo Yellow Rice recipes, too!

Easy Chicken And Yellow Rice Recipe

Quick and easy chicken and yellow rice dinner, perfect for using leftover chicken on a busy night.

Ingredients

  • 5 Cups homemade chicken broth
  • 1 10 oz pkg Vigo Yellow Rice
  • 2 Cups Pulled/chopped chicken pieces
  • 1 - 1.5 Cup frozen peas

Instructions

  1. Put 5 cups homemade chicken broth in a large pot and bring to a boil.

  2. Following the instructions on the Vigo rice bag - dump the rice in the boiling broth and stir for 1 minute on boil.

  3. Lower heat to simmer.  Dump in the chicken pieces and stir.  Cover and simmer for 20 - 25 minutes.

  4. Dump the frozen peas on the top, cover and cook for another 10 - 15 minutes.

Recipe Notes

I usually cook initially for 25 minutes and another 10 minutes after I've added peas.

Serve with a drop or two of hot sauce if you desire. (Not my deal).

Chicken and yellow rice is one of our FAVORITES. In fact, we’re having it for dinner tonight, haha! I like making my own yellow rice because I like looooads of turmeric, but this time I’m going to add some peas too- never done that before! Thanks for sharing <3

I generally don’t even mess with making my own yellow rice. Rice has a 50/50 chance of turning out right for me as it is. Eventually, when my kids aren’t as needy, I might take the time to make more of my own stuff again. My littlest is only 1 and still extremely needy, so I try to spend as little time in the kitchen as I can LOL

I find mine in the hispanic/latino section of our grocery store – not trying to be racially or culturally dense, but I can’t remember what the section of the store is actually called. If you haven’t sought it out there, maybe in the rice section? I’m starting to order my dry goods on Walmart to be delivered as well … you may have luck doing it that way too 😉 Good luck!

Use pre-cooked chicken – I love roasting a chicken and pulling apart the meat that’s left over. If you don’t have that, you could boil chicken breasts first! 😀

Isn’t 5 cups of water a bit too much for 10 oz. of rice?

Firstly, I use chicken broth. Because you’re adding 2 cups of pre-cooked chicken to the mixture, doubling the liquid called for on the bag of rice is essential as the chicken will absorb the liquid too.
If you were cooking just the rice, yes, 5 cups would be too much.
