Simple Sautéed Veggies

Zucchini, Squash and Onion sauteed in extra virgin olive oil

  • 1 Zucchini sliced approx 1/4" thick
  • 1 Yellow Squash sliced approx 1/4" thick
  • 2 or 3 slices White Onion sliced thin, cut in half
  • 2 Tbsp Extra Virgin Olive Oil approximate
  • salt to taste
  • pepper to taste
  • garlic powder to taste


  1. Slice zucchini and squash approximately 1/4" thick

  2. Cut 2 or 3 slices of white onion thinly, then cut each slice in half

  3. Heat a generous amount of extra virgin olive oil in a skillet on medium heat - 1 to 2 Tbsps should be plenty

  4. Toss sliced veggies into pan.  Sprinkle salt, pepper, and garlic powder to taste.

  5. Sauté all vegetables in skillet for approximately 20 minutes, flipping occasionally to prevent sticking or over-browning.
