This is a no-frills easy crock pot chicken broth recipe - perfect for making your own soups, stews, etc.

Chop ends off carrots (and celery if using) and cut in large chunks. No need to peel. Place in crock pot with chicken bones
Peel and cut ends off an onion. Cut in quarters and place in crockpot with chicken bones
Cover chicken with water. I have a large crockpot that holds 12 cups of water, easily
Cover and cook on high about 3 to 4 hours. Then switch to low for another 10 hours. (I usually switch to low right before I go to bed).
Strain liquid into glass jars making sure to leave room at the top if you're freezing them. I usually freeze in jars filled with 1 cup or 2.5 cups broth. Label the jars with the amount of liquid and date.
Let cool before storing in the freezer.
